Berebere Spiced Lentil Salad

INGREDIENTS
1 package TJ’s Cooked lentils
½ red onion, small diced
2 jalapeños, diced
1 large tomato, small diced
½ bunch Cilantro
2 cloves fresh garlic, minced
juice of 2 lemons (~¼ C)
2 tbsp olive oil
1 tsp Cumin
½ tsp Berbere spice
½ tsp black pepper
¼ tsp salt
¼ tsp mustard powder
EQUIPMENT
1 large bowl
1 medium bowl & Whisk or mason jar
Knife, cutting board
tongs
INSTRUCTIONS
In a large bowl, add lentils, onion, jalapeños, tomato, onion, garlic, and cumin
Prepare dressing in medium bowl or mason jar: combine lemon juice, spices and oil in a bowl or mason jar and shake or whisk together.
Add dressing to the bowl with lentils and stir to combine. Chill overnight and allow lentils to soak up the flavors.
Serve cold topped with pepitas, tossed with a bed of massaged kale or other greens and roasted sweet potato.
